Limoncello: How to recognize the original one.
The real limoncello is a 100% natural liqueur, without dyes or preservatives that contains all the scent of the best lemons: not too bitter, not too sugary, without aromas, essential oils, dyes or other ingredients – as they are found too often indicated on many labels, but not those with real IGP lemons of Sorrento. The Sorrento Lemon has become a Protected Indication of Origin due to its varietal and terroir peculiarity. Also known as Oval of Sorrento, it is distinguished from other lemons for its elliptical shape, medium-large size, peel rich in essential oils that make it very fragrant.
Limoncello: The best Quality.
It is grown in the municipalities of Massa Lubrense, Sorrento, Vico Equense, as well as on the island of Capri, with a unique cultivation technique that involves the use of “straw mats”, ie straw mats that cover the foliage of the growing plants in lemon gardens to protect them from bad weather and to delay ripening. Limoncello di Sorrento is made just like that, with peel of precious oval lemons, water, sugar, alcohol and is produced in Vico Equense, a splendid coastal village full of lemon groves. The lemons are harvested in winter, their peels carefully peeled and left to infuse for a whole week. In each bottle of Limoncello there are 300 grams per liter of I.G.P. of Sorrento, 20% more than requested by the Consortium. And it feels. Limoncello can be drunk neat, iced, or with tonic water, for a refreshing drink – and can be used in many sweet (and savory!) Recipes.
The traditional recipe.
The traditional recipe for limoncello involves macerating the lemon peels inside a pitcher of alcohol. After about a month of rest, the preparation continues by adding water and sugar (first brought to a boil and then left to cool) and other alcohol. The jug is then covered again and set aside for another abundant month. After about forty days, the infusion obtained is filtered into the bottles, naturally discarding the skins. The bottles are then placed in the freezer.
The taste of Limoncello.
The taste of limoncello, in fact, is enhanced when drunk cold as the sweet aroma is enveloped in alcohol. But even at room temperature it can be loved. It is, in fact, a very versatile liqueur that is also used in the preparation of fruit salads, ice cream, cakes and various desserts. Limoncello is, therefore, a very famous product and it is now traditional to exhibit the characteristic bottles in Neapolitan (and not) bars and restaurants, almost as a symbolic souvenir.
